Lemon Coconut Bliss Balls by Cass Morris, FIG & SALT

Who doesn't love a chewy bliss ball? Perfect for the mid-morning munchies or your 3pm pick-me-up, these sweet treats tick all the bliss ball boxes.  If anyone knows a good bliss ball, it's our tastemaker pal, Cass Morris from Fig & Salt.  Cass has created a quick and easy recipe jam-packed with all the nutritional benefits of Love Shake Creamy Vanilla Protein Powder. 
So tasty, you might just find yourself making a double batch...

Ingredients

1 1/2 cups desiccated coconut

1/2 cup almond meal

1 scoop Love Shake Creamy Vanilla Protein Powder

Zest & juice of two lemons

1/2 cup honey or rice malt syrup

1 tsp vanilla essence

2 tbsp melted coconut oil

 


Method

• Place ingredients into a food processor in the order listed above and blend until mixture resembles a sticky crumb

• Use your hands to shape mixture into balls, whatever size you like! 

• Roll balls in extra coconut and place in fridge to set.  These can be stored in an airtight container for up to 3 weeks in the fridge.  Alternatively, keep in the freezer for up to 3 months.
